Creamy Chicken & Parmesan Orzo

Ingredients

12 oz boneless skinless chicken breast, cut into small bite-size pieces 1/2 cup dry orzo 1 1/2 cups chicken broth 1/4 cup heavy cream 1/4 cup finely grated Parmesan cheese 1 tsp olive oil 1/2 tsp dried parsley 1/4 tsp garlic powder, optional if tolerated 1/4 tsp onion powder, optional if tolerated Salt, to taste

Instructions

1. Pat the chicken dry and season lightly with salt, dried parsley, and the optional garlic and onion powders. 2. Heat the olive oil in a medium skillet over medium heat. Add the chicken and cook gently until just cooked through, about 5 to 7 minutes. Transfer to a plate. 3. Add the orzo and chicken broth to the skillet. Bring to a gentle simmer, then reduce heat to medium-low. 4. Cook, stirring often, until the orzo is very tender and most of the broth is absorbed, about 10 to 12 minutes. Add a splash of water if needed to keep the orzo soft. 5. Reduce the heat to low. Stir in the heavy cream and Parmesan until smooth. 6. Return the chicken to the pan and warm through for 2 to 3 minutes. Taste and adjust salt. Serve warm.
