Herbed Pork Tenderloin with Light Pan Gravy, Soft Carrots & Rolls

Ingredients

1 lb pork tenderloin 1 1/2 cups baby carrots 2 soft white dinner rolls 1 tsp olive oil 1 tsp butter 3/4 cup chicken broth 1 tsp cornstarch 1 tbsp cold water 1/2 tsp dried parsley, plus 1/8 tsp for carrots 1/4 tsp dried thyme, plus 1/8 tsp for carrots 1/2 tsp maple syrup 1/4 tsp garlic powder, optional if tolerated Salt, to taste Black pepper, optional if tolerated

Instructions

1 - Heat the oven to 400°F. 2 - Trim any visible silver skin from the pork. Season lightly with salt, 1/2 tsp parsley, 1/4 tsp thyme, and optional garlic powder. 3 - Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the pork for about 1 to 2 minutes per side. 4 - Transfer the skillet to the oven and roast until the thickest part reaches 145°F, usually 12 to 18 minutes depending on thickness. 5 - Meanwhile, cut the baby carrots in half lengthwise. If any are especially large, cut them into roughly 2-inch pieces so they cook evenly. 6 - Place the carrots in a small saucepan and add enough water to just cover them. Season the water with a small pinch of salt. Bring to a gentle boil, then reduce to a simmer and cook for 12 to 15 minutes, or until the carrots are very tender and easily pierced with a fork. 7 - Drain the carrots well and return them to the warm saucepan over low heat. Add the butter, 1/8 tsp dried thyme, 1/8 tsp dried parsley, maple syrup, a small pinch of salt, and a tiny pinch of black pepper if tolerated. Toss over low heat for 1 to 2 minutes, until the butter coats the carrots and the herbs are fragrant. Remove from heat and keep warm. 8 - Transfer the cooked pork to a plate and rest for at least 5 minutes. 9 - Place the skillet used for the pork over medium-low heat. Add the chicken broth and scrape up any browned bits from the bottom of the pan. 10 - Mix the cornstarch with the cold water until smooth. Stir the slurry into the broth and simmer for 1 to 2 minutes, until lightly thickened. 11 - Slice the pork across the grain and serve with the light pan gravy, buttery herbed soft carrots, and dinner rolls.
