French Onion–Style Pork Chops with Savory Gravy & Mashed Potatoes

Ingredients
1 to 1 1/4 lb boneless pork chops
1 lb potatoes, peeled and cut into chunks
1 1/2 tbsp butter, divided
1 tbsp all-purpose flour
1 cup chicken broth
1/2 cup milk, plus more as needed for potatoes
1/2 tsp onion powder
1/4 tsp garlic powder, optional if tolerated
1/4 tsp dried thyme
Salt, to taste
Instructions
1. Place the peeled potatoes in a saucepan, cover with water, and simmer until very soft, about 15 to 18 minutes.
2. Pat the pork chops dry. Season lightly with salt, onion powder, thyme, and optional garlic powder.
3. Melt 1/2 tablespoon butter in a skillet over medium heat. Cook the pork chops until browned and they reach 145°F internally, about 4 to 6 minutes per side depending on thickness. Transfer to a plate and rest.
4. Reduce the skillet heat to medium-low and melt 1/2 tablespoon butter. Stir in the flour and cook for about 1 minute.
5. Slowly whisk in the chicken broth. Add a small splash of milk and simmer for 3 to 5 minutes, stirring, until the gravy is smooth and thickened. Season with a little additional onion powder and salt if needed.
6. Return the pork chops to the skillet and spoon the gravy over them. Warm gently for 1 to 2 minutes.
7. Drain the potatoes well. Mash with the remaining 1/2 tablespoon butter and enough milk to make them smooth and creamy. Season lightly with salt.
8. Serve the pork chops and savory gravy over or alongside the mashed potatoes.
